Choosing the freshest ears at the market
Selecting fresh corn starts with the husk, silk, and overall feel. Freshly harvested ears will be sweet, juicy, and have plump kernels.
What to look for:
- Husks: bright green, tightly wrapped, and slightly damp—avoid dry, brown, or yellowing husks.
- Silks: moist and golden-brown, not dry or blackened.
- Kernels: feel through the husk—ears should be rounded and firm, not soft or indented.
- Aroma: a sweet, fresh smell at the stem end is a good sign.
Additional tips:
- Buy corn the same day you plan to use it when possible; sugars convert to starch quickly after harvest.
- If buying pre-shucked corn, check the kernels visually for plumpness and even color.
- Local and seasonal corn will typically taste noticeably sweeter than imported or out-of-season ears.
Handling considerations:
- Keep husks on until ready to cook to help preserve moisture.
- If purchasing in bulk, plan to freeze or prepare most of it within 24–48 hours for best flavor.
Avoid ears with large gaps of missing or shriveled kernels, which indicate age or damage.
